There are four basic stages to produce black tea, withering, rolling, oxidation (sometimes referred to as fermentation) and firing. 

Other contributing factors that define the flavour of black tea, depend on the region, altitude and at which stage of growth the leaves are picked.

Another factor is the method by which the tea is picked. Machines are used in the modern CTC (cut, tear, curl) method.

However, the traditional / orthodox method, treats the leaves with more care and respect.

Iced Tea. 

Make as a hot drink but using 6 teaspoons of tea and add just enough water to allow tea to infuse. After 5 mins, pour into a quarter full pitcher of cold water and stir. Then fill the pitcher with cold water and ice. Sweeten to taste and serve.
