Green Tea

The different characteristics of green teas, come from the way the leaves are rolled and shaped.

The oxidation time is less than black tea, which is why the colour of the dried leaves remains green. This also makes green tea fewer in tannins and higher in anti-oxidents and flavonoids. 

It also has less caffeine than black tea and is reported to have health giving properties, if drunk regularly, including reducing heart disease and some cancers.

The method by which the tea is picked and processed can also determine the depth of flavour. 

Machines are used in the modern CTC (cut, tear, curl) method.

However, the traditional / orthodox method, treats the leaves with more care and respect.

Genmaicha. Popcorn Tea

A fun tea which is as interesting to look at as it is to taste

It really does taste of popcorn.

A good substitute to the real thing when sitting down to watch a good film. 

Drink without  milk and sugar. 

Preparation 

Mug.  

1  tea spoon per 1/2 pint water    (250ml) 

Small teapot. (approx 1 pint, 500 ml)

2 tea spoons per pot. 

Freshly boiled water cooled to  90 degrees (off the boil).

Serve after 3 - 7  minutes.

Iced tea.  

Make as a hot drink but using 6 teaspoons of tea and add just enough water to allow the tea to infuse. After 5 minutes pour into a quarter full pitcher of cold water and stir.  Then fill the pitcher with cold water and ice. Serve and sweeten to taste.

A delightful flowering green tea with delicate undertones of peach, lilly and jasmine. Leaves of green tea are hand stitched around lilly, jasmine and osmanthus blossoms.
