Rooibos & Herbal 

Commonly referred to as Herbal Teas, Tisanes form the category for teas which are not derived from the tea plant Camelia Sinensis. (Black, white, green, Pu-erh and oolong, are all produced from the tea plant).

Tisanes generally contain little or no caffeine. Rooibos is a particularly good alternative to decaffeinated tea, as it is naturally caffeine free. It is made from the needle-like leaves of a particular tree that grows in South Africa and is sometimes referred to as Red Bush tea.

Another popular base to blended herbal teas is Yerba Mate, taken from a tree that grows in sub-equatic countries in South America.

Preparation 

Mug.  

1 heaped tea spoon per 1/2 pint water (250ml) 

Small teapot. (approx 1 pint, 500 ml)

2 heaped tea spoons per pot. 

Freshly boiled water at 100 degrees

Serve after 3 - 7 minutes

Iced tea.  Make as a hot drink but using 6 teaspoons of tea and add just enough water to allow the tea to infuse. After 5 minutes pour into a quarter full pitcher of cold water and stir.  Then fill the pitcher with cold water and ice. Serve and sweeten to taste
