White Tea

The leaves of white tea are picked as they bud and are handled less than black or green tea. They go through the withering stage but are not left to oxidise and are therefore higher in anti-oxidents, flavonoids, caffeine and tannins.

The method by which the tea is picked and processed can also determine the depth of flavour. 

Machines are used in the modern CTC (cut, tear, curl) method.

However, the traditional / orthodox method, treats the leaves with more care and respect.

Preparation.

Mug.  

1-1/2  tea spoons per 1/2 pint water (250ml) 

Small teapot. (approx 1 pint, 500 ml)

3 tea spoons per pot. 

Freshly boiled water at 100 degrees

Serve after 3 - 7  minutes

Due to it's volume, this tea is sold in smaller weights.

 Humidity, air and light will spoil tea. So make sure it is stored in an airtight container, then it can't be contaminated by other odours.
